i decanted a lacto starter made from sauermalz and .040 wort that was on the heat blanket fro a couple weeks, and did not get the nice pellicle that i see some people getting, or show much sign of activity. I was surprised to find that the ph had dropped to 4.1 and the taste was pretty nice. i left the grains in the jar with about an inch of liquid, and took off the heat to see what would happen at 72. I have a ropy like pellicle (i can post when i find a camera)- kind of looks a little like pedio, but the aroma is testors model cement. maybe nail polish remover, maybe acetone, but really a dead ringer for testors. and strong. I am curious about this, because i always thought that acetone smells were associated with fusels and hot fermentations, and the part that was decanted did not smell at all like this. does anyone have any thoughts on this, or similar experiences with fermentations that you can put in a plastic bag and get high from?
