I am beginning to branch out on brewing styles. After reading and listening to many brew topics some recipes are 60 min, 75 min or 90 min boils.

Why and what determines boil time length and what is the advantage?

Thanks.

Dms is the big one, also often for higher gravity beers a longer boil is done to provide nice kettle carmalization as well as boiling out more water which raises the gravity.

I like to boil my hops for at least 60 minutes, and I don't add them until after the hot break is done (which takes about 15 minutes). I also boil for 90 minutes (after the hot break) if I'm using Pilsner malt.
