I only have 5 AG brews under my belt and I have this recipe for a bitter that calls for 7.5 lb MO and 0.5 lb wheat. I thought I read somewhere one time that you should do a protein rest when using what malt. Do I need to do so with such a small amount of wheat with respect to the amount of barley?

No. You never need a protein rest with well modified malts. Some advocate the use of one when using a lot of wheat (>50%), but others report equally good results using a single infusion.

I am an AG brewer and use a protein rest when using about 40% or more of wheat malt. For your proportions, you will be fine. I only use a protein rest because I had a stuck mash once without using one and it wasn't a pleasant experience.
