I took a batch of Riesling out of aging today and bottled . I re-fermented this batch because it was to sweet and now while the sweetness is right, I can taste way to much alcohol. How long , if at all will it take to mellow the wine so I taste the wine and not the booze. I filter to .5 mic so as to avoid larger amounts of sulfate. I don't normally age White for more than a year and have never had this problem before after second fermentation. I know it will still be consumed be my Daughter and her friends (20+ girls seem to love Riesling) but I am kinda funny about taste over all else

sorta figured out what I'm going to do, Grapes in Yakima don't harvest till fall, if then I don't like it I will go get some more juice and mix it with another batch I make week
