Spent yesterday BIAB of LHMS. Kept fighting the wind (blowing out propane burner). While I was cleaning other gear and inventorying other stock SWMBO jumped in to help.This is second batch as I really liked the first batch.
Did a 90 min boil to get down to 5 gal. batch from 6.25 gal. Once done and chilled I took a reading and got 1.094! Whoa - no way is efficiency that good as I typically end up about 73%. Target was 1.065.
Went back over the grain bill, the process etc. Checked reading with 2nd hydrometer and same results. SWMBO noticed my dumb founded look so as we spoke I learned she added 1/2 gal. LME I had on the counter. She "noticed" I had not put it in the kettle like other beer sessions (kits before BIAB). So being helpful she added it to the batch. I am expecting a slow start and long, long fermentation.
My questions are this -
a) Do I double pitch yeast or wait for stall? No starter just 1 bottle of WLP001
b) How now to add hops to offset sweetness?
Used 0.50 oz Magnum @ 60 min
Used 0.50 oz Goldings @ 10 min
c) Should I split this and top off?
