Those that have used Safbrew t58 - do you think it's the chimay yeast? I've used both the white labs chimay and Safbrew t58 and there seems to be a slight difference in flavor. Thoughts?
T-58 isn't bad, just not the Chimay, Westmalle, or La Chouffe strain. Creating dry yeast is not as easy as liquid, perhaps something about the strains causes more than typical difficulty too.
