I brew beer regularly but I do dabble in Mead and Cider
So I have made a JAOM, but I decided to step it up and do a nice dry mead.
I did 3 gallons after 6 weeks in primary I transfered it to a Glass carboy where it sits.
I used Mesquite Mead from Trader Joe's did it like Ken Schramm says with a beater
OG:1.100
FG: .997 (When transferred)
That puts me at 13.5% WOW...I couldn't believe it
Question 1: Is 13.5 % a decent ABV for a mead (too high or low)?
Question 2: It was hot when I tasted it, to be expected, how long before it will be ready?
Question 3: At what point should I bottle?
Question 4: Carbonate or no Cabonation?
