    Beer maturity and forced carbonation

    So I brewed a Hefeweizen kit from NB 2 weeks ago and would most likely be able to start bottling tomorrow. But am wondering if I force carbonate, do you still have to let the beer sit/mature for about 2 weeks or is it still considered "green"? I have never kegged or forced carbonated before so...

    Fermenter length

    So this is probably gonna sound bad, I left a brew in a fermenter bucket for probably a good 2 years, and wondering how to tell if its bad, other than major obvious signs of mold etc... It was a Surly Bender alc content about 5%, pulled open the top and it actually smells fine, should I dump it...

    3 months in primary

    So I brewed Northern Brewers Sweet Stout on January 20th and didn't get to bottling it til today, which is almost 3 months sitting in the primary. Is this a bad habit I need to break and any ideas if it will even be good to drink? Kinda nervous that I may have just wasted a whole batch of brew...

    First Brew with Wort Chiller

    Ok, I just need a brag post! Hubby finally got my wort chiller done, and alls I can say is "I can't believe I did 3 batches without this thing!"
