Opinions on how to use my 3 gallon barrel

My wife got me a 3 gallon whiskey barrel and I'm trying to figure out how best to use it. My thoughts are to use it as a bug farm, keeping it going solera style by taking a gallon to innoculate a brew and adding a gallon of fresh wort back to it. I know it is very small so my other option would...

    Zinc for Yeast health

I tracked down a source for Zinc Sulphate Heptrahydrate. homesciencetools.com carries it for $3.75 for 30g. I mixed a solution of 1g dissolved in 465ml of water which yields a 2150ppm stock solution. I use 0.5ppm zinc for my yeast. 1ml of the stock solution gives 2.15mg of zinc sulphate per ml...

    RIMs Tower of Power

I received a Top Tier for my birthday and decided that I would build a Tower of Power for it rather than try to hang everything on the Top Tier. I already used a RIMs setup so I had everything on-hand. I used a 4 foot piece of aluminum extrusion from eBay (80/20 brand, series 10, 2020). This...

    Kumquat Saison

Inspired by the recent Zymurgy article about kumquats I decided to brew a kumquat Saison. Going to use WLP565 and very lightly hop with Willamette. Plan on using 2 pounds of kumquats (split lengthwise and de-seeded) in secondary (2 weeks). I'll keep you posted.

So I was thinking...plate chiller as HERMs HEX

I already use a RIMs (120V 1650W) for mash control. However, it's a little under powered for good step mashing and mash out temperature rises. So I have this Duda Diesel 30 plate chiller sitting here doing nothing until the end of the boil. Rather than re-plumb my HLT I was thinking of using the...

"Audacity of Hops" - Great book

Just finished this book. It's a great run down on the craft beer movement and all the key players. Very interesting and well written.

Any Pinot Noir winemakers out there?

This year it looks like the best for Pinot in about 15 years in Sonoma County. Picking is planned for mid-Sept and I'm trying to get my fermentation plan in order. Looking for opinions on cold maceration, pre-fermentation enzymes, etc. My yeast choices are down to BM45 or RP15.

Toured Sierra Nevada - What a place!

I graduated from Chico in 1981 just as Grossman was getting SN off the ground. This past week I moved my daughter up there for school and went over to SN for a tour. What an impressive place. The tour was an hour long and went through the entire operation including the hop freezer. The tour ends...

Anyone else listen to the Gordon Strong Podcast on Beersmith?

He made some interesting points and discussed his techniques with regard to specialty grains and hops. Basically: 1) Specialty grains are either steeped seperately or added to the mash at Vorlauf. He suggested having them in for the entire mash is equivalent to over-steeping tea and...
