    Lactose question

    I'm trying to make a s'more inspired stout. I had duck rabbits milk stout and thought the sweetness wasn't enough in there to get the marshmellow kind of sweetness I was looking for. I was thinking about using 1.25 to 1.5 pounds for 5 gallons. Would that be over board/has anyone tried this?

    Consistently low FG

    Nearly every batch I've done, no matter the OG (which range anywhere from 1.04 to 1.07) all finish between 1.001 and 1.008. I'm not so much concerned as I am interested in why this happens when the higher OG I was expecting to finish around 1.010 ish. I use Wyeast American ale by the way.
