    RIMS wizard and step mashing

    Has anyone had any experience stepping up with a RIMS wizard? Seems it is good for maintaing temps (which I can do just fine with my current HERMS setup) but can it effectively raise mash temps in a reasonable amount of time?

    Fresh hops questions

    I've always used store-bought hops but a friend has picked some centennial hops for me. Is it OK to dry in a plastic bag and then place in a freezer to store? Also, how do you know when the hops have suffciently dried? Is it sanitary for dry hopping? Any thoughts would be appreciated. Thanks.

    2000 watts v. 1700 watts for RIMS

    Rheem makes both a stainless 120V 2000W and a 1700W low density element. Any ideas on which one would be better for step mashing and preventing scorching with a RIMS tube having a 1.875" i.d. (or is there really no difference)
