    new belgium's biere de mars has this in the bottle. in that case, they inoculate the beer with brett at bottling. i dont really know what it is though.

    yeast starter question

    You will get more yeast growth if you use a stir plate, but swirling it will still grow plenty of yeast cells. Check mrmalty.com's yeast calc to make sure you are pitching an appropriate cell count; you may have to make a larger starter to account for your lack of a stir plate.

    After 2-3 weeks in primary, the hop sediment should be pretty firmly settled into the trub/yeast cake. When you rack into the bottling bucket, hop sediment probably won't be an issue.
