    Too sweet too mild

    3 gal cranberry wine finished too sweet and low ABV. Thinking to fortify and add water but body is excellent as is and don't want to water down. No more fermenting possible. Ideas???

    Cranberry Wine

    So I have a three gal batch done but has low ABV and too sweet. Won't restart so want to fortify a bit with Vodka and add water to cut sweetness. Body is excellent and don't want to water it down. Any ideas.

    Question starting batch

    I used this recipe: 19 lbs honey, 4.5 gals water, 1.5 packets Lavlin EC-1116 yeast, 5 tsp Fermax nutrient, to arrive at 6 gals of must at a CG of 1.115.     My first batch of tupelo mead is telling me something, but I don't know what? Mixed 9/12/11. Racked 10/2/11, with 6 sec. Percolation. Racked into carboy 10/14/11, when only 1 bubble @ 4 min. Placed plastic sandwich bag and rubberband over airlock to test for CO2 escape, can't see any bag...
