    Hop schedule is good but I think I'd change the 20 min addition to 15. Chinook is a good bittering hop too if you wanted to use that at 60min.

    Cascade, Centennial, and Chinook have some grapefruity characteristics to them if that's what you're going for.

    flavor during first or second fermentation?

    Fermentation should be done after the primary when you have the same FG for three days straight. Then you rack to the secondary to clear the beer up and I believe this is where you add your orange peel. I've never dry hopped with orange peels, but I imagine is the same as hops. So to answer...

    I think I was looking at Measured Efficiency in Beersmith. It says my total efficiency is 72% and Est Mash Eff. is 79.2%. Which of these numbers should I be looking at? I've attached a screenshot of Beersmith, let me know what you think. Thank you.

    Ok, I'll try it out. I was going for the continuous hopping method. Can I just add a lot more at 60 min then still continually hop, just with smaller quantities?

    Thanks for the feedback. Do I need to calibrate BeerSmith? It says it'll be 64 IBU with that amount of hops. I'd rather trust you than the software though, so I'll make the adjustments.
