    I've got a beautiful "Belgium Stout" from beercraftr's recipe of a 1 gallon batch. Of course, I wish I brewed more, but I'd never know that if I had to brew 5 gallons of it because I'd not have brewed that much at a time to know! It's a big beer, around 9% and smooth as hell.

    I dont think your mishap would do much to give you a high FG. Give it a light shake and wait a bot longer before taking another gravity reading.

    miss OG by a lot

    You might end up ok if you mashed on the lower side and your beer dries out a bit more than expected. A smooth eight percenter will also finish quicker than a ten percenter, so i bet that you will be enjoying that ris THIS cold season instead of the NEXT one!
