    Diacetyl

Diacetyl is a yeast by-product generated during fermentation, and is usually reabsorbed during secondary fermentation. The compound is identified as an off-flavor in beer, but is sometimes appropriate in small quantities depending on the style. Diacetyl is identified as having a...

Need Help: Adding Ball Valve to new Kettle

Ok, I went ahead and purchased the ball valve and fitting, but would like more information on how it all fits together before purchasing the pick-up tube. Of these three pieces, where is the point at which the assembly passes through the kettle wall? Is it where the fitting and the pick up tube...

Need Help: Adding Ball Valve to new Kettle

Hello fellow brewers, I am upgrading my brew setup from 3-gal batches in the kitchen to 6-gal batches in the garage. To complete my brew setup, I want to add a ball valve to my new kettle. I am planning on having it welded in place, as my cousin can do this for free. I have read several...

    First Year Cascade & Trellis

SO, my first year Cascade did very well to say the least. I limited the vertical growth to two bines, clipping away all subsequent shutes. The total growth reached a little over 14 feet, and the total harvest was 8.75 ounces:D. We had an interesting summer in St. Louis (the word "interesting"...

    First Year Cascade & Trellis

Hello from St. Louis! This is my first year Cascade hop vine, currently at 7.5 feet. Hopefully by July the vine will reach the top of the trellis. Anyone in the area have an estimate on what to expect for a first year yield on Cascade?

M.O. & Cascade SMASH at bottling

I bottled my first SMASH yesterday after a 20 day fermentation (7 primary, 13 secondary). It's a Maris Otter & Cascade combo, hop additions every 12 minutes. It finished at 1.018, ABV of 6.0%. The taste seems well balanced, and I really like the color.

    Scottish Ale recipe help needed

Tonight was brew night. A few adjustments were made, had to use the hops I had on hand. Here's the final recipe (3-gallons): 5.5 lb 2-row Maris Otter 1 lb Munich Malt 0.5 lb Honey Malt 5 oz Crystal Malt (120L) 5 oz Crystal Malt (40L) 4 oz Chocolate Malt (350L) 4 oz Roasted Barley (500L)...

    Scottish Ale recipe help needed

HOPS: Does doubling each variety for the 60 minute addition sound like a better qty? 0.2oz Fuggle & 0.2oz Goldings, for a total of 0.4oz. (note that this is for a 3-gallon batch) MALT: I have never used Honey malt. I will do some reading in the forums on this ingredient, but my first...

How do you clean your carboy???

Overnight soak in an Oxyclean solution or a diluted bleach solution always does the job, no scrubbing necessary. Cleaning a carboy with this method will literally cost you less than 15 cents.

    Hard cider with Apricots...

I currently have a batch of Apfelwein fermenting as we speak. I let my first batch age 6 months in the bottle. This stuff is friggin delicious! I couldn't keep from pouring another bottle... and once my wife tasted it, the rest of the batch completely vanished. Overall, Apfelwein finishes...

    Scottish Ale recipe help needed

Below is my third go-around in search of the perfect Scottish Ale. My two previuos recipes were decent, but I am looking to really ramp this one up! I would like to get any and all suggestions to improve on this recipe. I brew in 3-gallon batches, using the BIAB method. GRAIN BILL: 6 lb...

    Dry Hopping Phenomena??

My brother and I both brew AG, mostly in 3 gallon batches. This month, he brewed 6 gallons of Irish Red Ale, and split the batch between two 3-gallon carboys. His idea was to dry hop in both carboys, using a different variety and quantity in each. I have attached a picture of what the batch...

    Brewing books

I would recommend checking out Palmer's free material online at the very least. Its an easy read, and will help explain the "what to do" and "why" parts of the process. And by the way, did I mention its free? I have two books (The Complete Joy of Homebrewing, and Radical Brewing) which were...

New Member from St. Louis, MO

Hello All, I am new to the site, but have been brewing for about a year now. I have been doing AG since day 1, although I did 2 extract batches last month to save a little time while stocking up for the holidays. I currently do 3-gallon batches, BIAB style. I have educated myself through...
