    No oak in that one. I suspect it is from the cranberries. I used the Belgian Lambic blend from Wyeast so the brett might be throwing some of those flavors as well. I am glad you like it. I brewed it a long time ago but I was worried it might not have enough time. Cheers!

    Missed starting gravity

    Hard to say exactly what you did wrong but it has to do with the measuring. It's not possible that your post boil gravity is lower than you pre-boil. It can't go down when you boil of some water. I would recheck the gravity of the wort in the fermenter and use that as your OG.

    Cranberry and Spruce Tip IPA?

    I don't whirlpool this beer since there are no late hops. I just let the spruce soak after the boil to get the extraction. Certainly if you were whirlpooling some late hops, you could just put the spruce in there. I think with Columbus and Simcoe, it might be hard to pick out the spruce flavor...
