    Thanks for all the info. That is a huge amount of hops. Are you doing 10 gallon batches at that? I guess I forgot to mention this was a 5 gallon batch. I will certainly take your advice on what hops to use at different times and move the Citra towards the end. If it doesn't seem hoppy...

    So just for my learning, what would I have to do to make this a full out IPA instead of a hoppy pale ale? Would I need to add more grains? Also if I added more hops to the schedule could I keep the crystal in? Just for some darker color and a little more body to it.

    First time cider got rookie question

    So campden tablets don't stop it? Guess I read that wrong. The gravity reading was 1.002 before transfer down from 1.052. I went ahead and started a cold crash. That should stop the yeast for now. So what are the campden tablets for? Done lots of beer so I understand the process a bit, just...

    I just transfered to secondary. Racked onto apple juice concentrate to back sweeten. All of the sudden it is bubbling. I used Campden Tablets in primary to stop fermentation and waited a week before transfer. Should I add more to secondary to make sure it doesn't eat up the concentrate? Or...

    Usually condensation comes from air getting through the seal. You can try wiping it down real good with rubbing alcohol or some kind of cleaner and then putting a little oil, like vegetable oil, around where the seal meets.

    Just an update to all. I let it sit and ferment for a while to let it try to clear itself as best I could. It's been almost 3 months and I tasted it yesterday. I would say it was a bit stale. It looked okay when I poured the glass. Smelled a good bit sour. But it tasted like tomato juice...
