Have you been getting yoru extract from the same store? Perhaps try a different source as as Vikeman stated try using the DME. Just slowly start ruling things out. Once you pin point your source for the off taste you will be golden.

Interesting about making starsan with RO water. I'll have to try that next time. Mine is always cloudy actually my starsan consistently does this after about a 1/2 hr of making the solution: https://www.homebrewtalk.com/f14/starsan-band-273739/ No idea why. I just learn to accept it, mix it up...

So what method(s) do you use when bottling one gallon batches? I assume not using a bottling bucket due to loss of deadspace with a small batch or am I just wrong on that?

I just finished my very first one gallon brew. Went with a BIAB on a portable convection top (Wasn't the best to get a boil). I ended up brewing a honey pumpkin saison. Pretty excited to see how this batch turns out.

As long as the beer is not infected you should be fine. I tend to use boiled water (cooled) or distilled water for this purpose to mitigate infection.

Welcome and congrats on brewing your first batch. The one thing you will learn in here is never to judge fermentation by time or by the airlock. A beer is done fermenting when it decides it is done fermenting. The only way you will know it is done is by testing the beer with a hydrometer. As for...
