Which San Diego Craft brewery is next to go nationwide?

It seems that Mother Earth is poised to really ramp up production and distribution since they are building a huge new facility in Idaho. Modern Times is growing very quickly, but I think they are a ways off from nationwide. Societe doesn't even bottle their beer in 22s. Sure wish they would...

Double Batch of IPA and the Freshness Conundrum

Just turn CO2 down a bit so it isn't totally carbonated. I find that when you jump a keg over it is best to not have it fully carbonated anyway. I once tried to drop pellet hops in a mesh bag of fully carbonated beer. Total volcano as you mentioned. The fear is real.

    Dry hops suggestion

lots of ways to go there but I'd stick with chinook + any combo of Centennial/Cascade + a bit of willamette Of course you could also go nelson/galaxy

Mash Tun question regarding 10 gallon or 15 gallon

Get the bigger one. It's nicer to not have to push the limits of your tun for big beers.

Double pitch US-05 in NB Plinian Progeny?

    That should work fine!

    Prairie Standard Farmhouse Ale Clone?

I too, love this beer and will be trying to brew it. Here, Chase Healey says that they use 3711 and then Brett Brux for conditioning. Read the whole chat here- http://www.talkbeer.com/community/threads/chase-healey-prairie-artisan-ales.12352/page-3

    Sweet IPA isn't making sense

but that 54 is competing against some sweetness from the malts and honey. I'd think you'd need to up the bittering charge. Maybe don't do a FWH and add more.

    Sweet IPA isn't making sense

I'd say that the FWH has something to do with it as well. When I do a beer with FWH I tend to get a much smoother bitterness and not the traditional bite. Plus, that is not a ton of hops for a bittering charge (Yooper beat me to it): just under 1 ounce so that must be the issue.

    Sweet IPA isn't making sense

Have you used this grain bill before? The honey coupled with Munich/GP might be the source.

    WholesaleHops.com

Hops Direct, Farmhouse Brewing, Label Peelers are all good places to buy bulk hops. I always forget about nikobrew. Will try that too sometime

    Fruit Beer Lemon-Lime Hefe Weizen

There is a lot of leeway with this recipe. I have brewed it many times now in different ways. It is best as it is presented here: with the juice and mashed appropriately. I have mashed as low as 150 and it was fine. Shoot for 153-4 and you will very happy. I do like the grapefruit version too...

All my batches have a "hot" off taste . . .

Sometimes it takes awhile to present itself. Are you fermenting on the warm side?

    Wort Chilling Container

The prechiller idea is a good one. It makes a huge difference and you don't need a ton of copper tubing to make one. Give it a thought

Travel to San Diego… and more??

You can get a lot of RR beers in San Diego at the many brew pubs or bottle shops. I wouldn't waste the time or $ flying and then driving around for RR when they are available on draft down here. Pliny, Blind Pig and Sanctification were just on tap at pizza port carlsbad last night. Their bottles...

    Using 100% homegrown hops

No way to know until you give it a shot. I just brewed my first all homegrown pale. It seems like it will be good, but I will just have to see what type of flavor I get from the homegrown cascades and nugget. I would imagine that most homegrown hops end up being a bit under in the average AA%...

whiteflies IN my hops at harvest time!

That thread is talking about Japanese Beetles which can do a lot more damage overnight than whiteflies can in weeks. Of course, send us some pictures so that we can see what we are talking about.

whiteflies IN my hops at harvest time!

I think if you pick them and start to t=dry them on screens many of the critters will bug out. Especially if you have a fan on them. I am no expert though. Also, unless it is just a massive amount, I say dry and use them. So much of the food we eat has bugs etc.... You will be boiling them...
