    WLP644 -Brett B Trois

I am modeling the recipe from this source - http://sjworthogs.org/documents/Old%20British%20Beers.pdf. So this is more of an curious experiment. I after reading up on this yeast strain I am beginning to wonder if this yeast may have been involved in old IPA's. This is a long term project and...

    WLP644 -Brett B Trois

So my LHBS sold me WLP644 because I wanted to do a 100% brett. Well, I now see that won't be the case but the discussion around this yeast seems it's still an interesting yeast. I have a special recipe I have been wanting to do and would like some feed back about using this yeast. It's an Old...

almost dumped IT but tasted IT first...

oh and the mash got very VERY stuck. I ended up having to stir/lift a giant pudding from the bottom of the mash tun before it would drain. It was probably all the corn. I think I should have used some if not all 6-row instead of the maris?

almost dumped IT but tasted IT first...

So I brewed this last summer and planned on bottling before labor day but life happened. I thought it got infested by fruit flies (heheh I know but I planned on the name before then) and when I opened the fermenter I thought it was ruined. Lots of floaties and a big ring in the middle. Moved it...

That is an option but it still about 66F and the temp fluctuates.

    Saison Question

So I am planning on brewing a tank 7 Clone but have some issue with ferment temp. Still very mild weather here in Colorado and my basement is parked at 60F. My though is make a starter with WLP565 let it go for 4-5 days then pour off spent wort and add new wort and pitch with a more aggressive...

    Saison Bucket 7 Saison

How long from brew day till drinkable for you? I am planning a special brew for labor day and wondering when I should brew. Tried the original the other day and loved it. Be a great hot afternoon beer.

Saison Boulevard Smokestack Series Tank 7 Farmhouse Ale Clone

What is the reason behind using so much flaked corn? Does it add to the flavor profile or more to ferment out drier. Also, when I calculate out Boulevards dry hopping rate for this beer I get something like 12.5 grams/5 gallons which seems like a pretty low dry hopping rate.
