    Wine + beer bottles + cork-lined caps

Hi all, I'm a long time beer brewer, about to bottle my first wine (Old Vine Zin). I plan to put at least SOME in 12 oz beer bottles for smaller portions. I just ordered some cork-lined caps with this in mind. Does anyone have any experience with these? Should I lay them down to keep the...

Water before grains or vice versa

Or the third option, which works like a charm. Get a buddy to pour in the grain as you pour the water from the opposite side of the tun. "Cross the streams" and you almost don't have to mix at all. I've done it dozens of times and its great.

    Persistent white mold problem

Yeah it's pretty crazy! I just harvested my hops so I'm drying them with the help of the dehumidifier. I have it cranked as low as it'll go and I have to empty it 3 times in 2 days. Doesn't help it's been raining, I guess....

    Persistent white mold problem

Hi all, Thanks so much for the great replies. We do have a nice dehumidifier, so I think Pedio is probably the culprit. I am pretty manic about sanitizing, but I use StarSan. I will investigate oxygen-based solutions. I don't mill grain in that area, but I do measure bulk grains, and that's...

    Persistent white mold problem

I've been having an increasing rate of white mold. It usually pops up in secondary, but I've noticed that even if I leave a half beer sitting around it will skin over within a day or two. Is there any way to treat the basement as a whole instead of just bleaching/sanitizing the carboy?

Using hot tap water when brewing

I think the main reason is the anode inside the water heater is constantly (and intentionally) corroding into the hot water. See this: http://bostonstandardplumbing.com/water-heater-maintenance-the-sacrificial-anode/ I use a Stainless Indirect holding tank, so the water is held in a 40...

easiest/best way to add strike water to mash tun?

This may not help, but I usually brew with a friend and we have a system that takes about 30 seconds: one person pours the water and the other person pours the grain. Both pours happen simultaneously and from opposing directions (facing each other, pouring "into" each other's pour), so there...

How much thyme will this take?

The whole time/thyme pun never gets old, does it? Anyway, I'm brewing a wit this weekend and plan to add either regular thyme or lemon thyme. My question is how much? I've looked around and it looks like about an ounce at the end of the boil (5mins?) for a 5 gal batch. I have access to fresh...

    STC-1000 for eHLT?

Hi all, I did a search but didn't find anything... When I was building my keezer, I accidentally bought a 240V STC-1000. I didn't bother returning it, just ordered another one in 120V. But now I'm thinking of building an eHLT and wondering if I can use this? I've heard there's some...

    Bev Line cleaning

Hi all, Last night I was swirling some BLC around a 5 gal kettle full of random lengths of bev line. It made me think: A stir plate would be good for this! I don't have one, but just thought I'd mention it... dh

    Too late, but...

Ok-- last week I brewed a big IPA. I made up the recipe based on what I had lying around. Im afraid i might be low on crystal... (?). It's still fermenting but I'd love to here your critique: 18 lbs 2-row 4 lbs Marris Otter 1 lb cara pils 1 lb crystal 10 1lb wheat 0.75 special B...

    Compensate for low mash temp?

Hi all, I did an impromptu IIPA last weekend and the mash was around 150. I am learning beersmith (got it for Xmas) and I think I need to tweak my tun temp.... Anyway, I am afraid this will be too dry. Do you think I can do a small mash at 160, boil for a bit and add to the fermenter to...

    since switching to all-grain.....

I have to agree. I brewed 2 extract kits just to learn the ropes and then switched to AG. I feel confident that I can discern an extract from AG with my eyes closed. The food analogy is a good one. Fresh ingredients vs canned/dehydrated extract? Which do you THINK is going to taste better!?

    50 gallon brew week!

I actually split my batches with a buddy, so I only have to ferment half of it. And re: temperature, it's whatever my basement is (in Massachusetts). The lemonade is actually non alcoholic, but it did get boiled, so I consider it 'brewed'. It's carbing in a keg for when SWMBO gets home. ;)
