Is it possible to bottle condition too long?

I've only been brewing about 6-months. I've brewed about 8 different styles during that time. Each batch has bottle conditioned (and remains in the basement) @ approx 60F until ready to drink. Periodically I bring a couple bottles of each batch up and put them in the refrigerator a few...

Does Ball Valve/Thermometer need heat shield

I'm installing a ball valve and thermometer on my 62-qrt Bayou Classic brew pot that I'm using on the burner from my turkey fryer and was wondering if I need some sort of heat shield/deflector to protect it... Thank you,

    Thermometer - where to install?

Hi - I'm planning on installing a weldless ball valve, dip tube and thermometer on my new 62 qt bayou brewpot. Plenty of info regarding the valve/tube, but I can't find much about the thermometer. Any suggestions regarding the recommend location for the 6" thermometer? Most photos I've...

When cleaning/sanitizing your equipment, do you remove the gasket that's inside the fermenting bucket lid?

    Kolsch; Too much 2-row?

I'm attempting to make the Summertime Klosch clone (Extract w/Grains) from the BYO Clone Recipe. The first ingredient is 1.0 oz (28 g) 2-Row Pale Malt (1.9 L). I gave the guy at the LHBS my recipe and he gave me (and I used) 1.0 lb 2-Row Pale Malt. Yesterday was day 28 in the primary and...

Citra Pale Ale - Boil Pot (not Aluminum)

I have a Citra Pale Ale kit. The instructions list the 'Equipment Required' and it specifically says (not Aluminum) for the Boil Pot. This will be my 6th kit and I've never seen the instructions say 'not aluminum'. Does this have anything to do with the Citra hops? Thanks!

Set of Four 5 Gallon Pin Lock Cornelius Kegs

Is this a good price? I was hoping to get into kegging in the next year or so. I'm not necessarily in a hurry, but was wondering what you think, is this a; don't pass-up deal, or wait, you can do better http://www.homebrewing.org/Set-of-Four-5-Gallon-Pin-Lock-Cornelius-Kegs_p_1549.html Set...

    Kolsch - Can I mix/match recipes?

I'm looking to do a Partial Mash. I have two recipes; Cinco de Mayo Kolsch (from the HBT recipe section) and Summertime Kolsch clone/Goose Island (from BYO). I would like to use the recipe from BYO (provides more detailed info for those of us less experienced ;) but exchange the hops...

what does 'carbonate to ## volume mean?

I'm reading 'Brewing Classic Styles' and under the Fermentation and Conditioning section in the individual recipes I'm reading, '...when finished, carbonate the beer to approximately 2 to 2.5 volumes...' (example changes depending on the beer styles)... What does that mean? Thanks!

Siphon - gotta be a better way?!

Bottled our first batch last night :ban: from a 6 gallon carboy but, man-o-man did we have a devil of a time  There's got to be a better way... I think the biggest issue was the height of the racking cane (it's about 6 ins taller than the top of the carboy) - after several attempts we...

Amber Lager @ Ale Temps w/2112 yeast...

I wanted to do an amber lager clone and since I don't have the set-up (yet) to do the lagering, the lhbs suggested replacing the Wyeast 2206 Bavarian Lager with the Wyeast 2112 Cal Lager. ...will it work? So, I'm guessing that after pitching the yeast, instead of fermenting at 50 for 2...

    Rinse the Grains?!

Ok, so it's only my second brew and the kit (Oatmeal Stout) says to heat 1-gal water to 170 and use this water to 'rinse the grains', draining the runnings into the large boil pot... what the heck is that supposed to mean? so... here's what I did ;) I had some metal bbq kabob things that I...

My brew has taken on a life of it's own!

:D Brewed my first batch yesterday afternoon and after 12-hrs it is bubbling away like crazy! I chose to use a 6-gal carboy as my primary, attached a blow-off tube and covered it in one of my brewery shirts inside of an old milk crate - my efforts seem to have paid off because 'he' ;) seems...

    immersion wort chiller question

We saw a immersion wort chiller in the LBS a few days ago and DH says; I can make that... So this morning I was sharing what I read on the bb with him (length, diameter, running the chilled water thru the copper coil...) and he said; why not run the wort thru the coil, it'd be quicker... Hmm...

    Hi! Newbie from Michigan

Just started making wine a couple months ago, now hubby is asking about beer... hoping some of the equipment is the same ;) I found a 5-gal stock pot on sale for $17.99 that I'm thinking is a good buy? And it sounds like I should keep my primarys separate from beer and wine and that I'll need...
