    No problem at all jcav! I'm not an electrical expert by any stretch of the imagination, but simple switches are easy enough... I'm sure you'll do just fine. Just take your time and double check your wiring before you fire it up.

Though I'm loosely following an English IPA recipe by Jamil Zainasheff from "Brewing Classic Styles" and it calls for WLP013, Wyeast 1028, or Danstar Notty. I'd like to stick with one of those if I have to drive to get more yeast...

    I hate carboys.

    I usually use buckets for primary and carboys for secondary. Mostly because there's a lot less head room in a carboy for oxygen to hide. That's not an issue during primary fermentation of course. That being said, I've been considering NOT racking to secondary for moderate to lower gravity...

    High Fructose Corn Syrup proposed to be renamed "corn sugar"

    Not to argumentative at all but I've read (from multiple sources) that HFCS is much harder for the body to convert than simple sugars, which is why some studies link it to obesity and diabetes. I personally try not to eat/drink anything containing HFCS. Yes, I'm a grocery store label reader. :)

    That's the problem, I don't want to paint myself into a corner on brew day. If the Notty is questionable come brew day, I'd have to know before I mash. I could pitch a backup (I have WLP001, WLP008, US004, US05, or Danstar Windsor) but I don't think any of them will give the dry finish I'm after...

    I would really consider wiring a switch inline, It'll make thing a lot easier. Sure beats plugging/unplugging it all day long. I used a 3-way light switch ($2) and a metal box/cover ($1.50). Oh, I splurged for spade connectors ($2) as well. It'll be $5 well spent!
