What hops to use in my Scotch Ale

I am getting ready to brew a 10 gal batch of Strong Scotch Ale. I think I have my grain bill figured out but I'm wondering about hops. I have a bunch of Willamette, Cascade and Magnum in my freezer. Are these acceptable choices for my Scotch ale, and when and how much should I add to the boil? I...

adding maple to nut brown ale

I just used maple syrup in a Russian Imperial Stout. I added it right at the end of the boil. As suthrncomfrt said, it is really fermentable. My primary exploded. Make sure you use Grade B, it retains the maple flavor better than A. Some people add it to the secondary as well.

High Gravity Beer - Blow off tube problem

I did a Russian Imperial Stout a little while ago with an OG of about 1.104. I used an airlock and the bucket exploded in my closet within about 6 hours of pitching. Fortunetly my lid seal was a little old and it just ran over the side and didn't completely blow up. I was originally thinking...

    wort chilling question

Did any of you try this and if so, did it work out? I was thinking about doing the same with silicone tubing.

    Different wort chilling technique question

Hi, I just built a keggle and now I need to figure out how to cool 10 gal of wort. I don't have the funds for a wort chiller but I do have about 15ft of hi-temp tubing. I was thinking about freezing a bunch of large blocks of ice the night before and then filling an ice chest with the ice...

Keggle Weld damaged Threads on inside

Hey guys, I thought I would give you an update. I found a tap and wratchet at harbor freight and followed Catt22's instructions and everything worked fine. I think I was pretty fortunate in that there was enough thread exposed for the tap to get started. My dip tube is firmly sealed so thank...

Keggle Weld damaged Threads on inside

Hey everyone. I took the leap and decided to make a keggle. Everything has gone relatively well. A friend of mine knew a welder (with no keggle experience) but otherwise an exceptional welder (race car frames or something). Anyway, I just got the keggle back and the welds look great. He did the...

First Russian Imperial Stout - More Yeast?

I thought I'd give you guys an update. Just 3 days later, my Gravity reads 1.034. I was surprised to see it ferment that quickly. It looks like the London Ale yeast was a good choice. Hopefully it will drop another 5 pts or so.

First Russian Imperial Stout - More Yeast?

These are some great points. I didn't realize the style guidelines had RIS with an FG up to 1.03. That makes me feel a bit better. I will probably leave it in the primary for 3-4 weeks like you suggested. So far the fermentation is going nuts. I used an ale pail rather than my galss carboy...

First Russian Imperial Stout - More Yeast?

Hi Everyone, I just brewed my first Russian Imperial Stout today and wanted to ask a few questions about adding more yeast. I basically used the NB imperial stout kit but I tweaked a few things. I made a starter from some DME with nutrient, 2 pints. I added 24 oz of maple syrup right at the end...
