    adjusting gravity

    I started a peach wine at 16 brix....kinda low. its fermenting nice now and i want to get the gravity up to 21brix or so...how much sugar should I add. I currently have a volume of 3 gallons at 16 brix.

    Cork Issue

    Yesterday I opened a bottle to try and my corks are soaking up the wine. You can see the color change on this cork. This wine was stored at a High temp probably Hi 80'sF. "Not Ideal" Do you think the high temps caused this or my corks are to small, to cheap. Any advice appreciated. Thanks

    stirplate question

    I am making my own stir plate. I have a nice fan 24volt. I have an adaptor that plugs into the wall that feeds the fan 24volts. I need to slow it down with a rheostat/ potentiometer. Do they make rheostats for 12volts, 24 volts etc...or will any radioshack potentiometer work.

    Stepping down a recipe

    When stepping down a all grain recipe from a 5gallon batch to 3 gallon batch, should I adjust the specialty grains as well as the base malt? Or should I just adjust the base malt to hit my gravity?

    How do you calculate the amount of sugar to desired gravity? If you have 4 gallons of must at 1.070 and you want to end up with 5 gallons of 1.090 how do you figure the sugar and water? I'm sure this has been asked before I did'nt find it in searches.

    OG and FG

    I ran a gravity on 7.5 gallons @68F and got a 1.030. PreBoil I never checked after the boil gravity, is'nt there an easy way to figure that. I ended with with 6 gallons on a 90min boil. should have been around 1.045 on 6 gallons right?
