    Concord Grapes in sour beer

I have a ton of ripe Concord Grapes growing in my back yard. Instead of adding my normal 10 pounds of tart cherries to my beer I thought Concord Grapes might be a nice substitute. Anyone have experience with grapes? Would I still use 2 pounds per gallon? Leave the beer on the grapes...

Early growth from 2nd Year Hop

Last year I cut my bines back to ground level, some even poking up an inch of two. All of the emerging grow thus far is coming off of these bine and not from the "crown" below. Is this okay or should I cut them back deeper in the ground? At the end of this season should I cut the bines...

    Keg Hopping Question

After fermentation, I cold crashed my IPA and racked it on to 4 oz of hops in the keg. I am not happy with the aroma and I think it is because the beer was dry hophed at cold temps. I was thinking about bringing the keg inside and letting it warm up into the mid 6o's for three days or so. My...

I have a 2nd year centennial. The first shoot was a big, thick bastard grew very fast. I cut it back because I read this was common practice. About 2 weeks later I got two more fairly good size shoots that also went up like gang busters. They are 4 feet tall and are producing lateral arms...

2nd Generation of Wyeast Brett B and Belgian Saison

I made a Wyeast Brett B and Wyeast Belgian Saison beer about one month ago. I am going to let it age to get a more pronounced Brett flavor. I am interested in making a new Saison wort and pitching it directly on the cake. This time I am looking to make a quick Saison one month or so. I am...

    2nd generation brett

I have a Saison in the primary that I pitched Brett B and Wyeast Belgain Saison from the start. My question is, if I pitch a new Saison wort directly on the cake will it get funky faster? I have read that Roeselare get more funky/sour faster after each generation. Is this true with Brett?
