    Thanks for all the replies. I forgot all about brewing salts. I never used them before. I just want to make sure my mash pH is straight. I mean buying 8 gallons of spring water is fine but I am looking at 20 or so. Kinda makes things expensive. I re read some john palmers book on brewing...

    Right. I heard that RO is not good for beers for there lack of minerals. I am thinking about just pulling off the RO unit and running it through the carbon. I can keep the lead and heavy metals out and minerals in. Anyone rejects that?

    Overdosed the priming sugar

    I overdosed on the corn sugar one time too. Watch out for exploding bottles. Handle carefully. Had the same experiences as the other posters too. Edit* yes I did have a few bust. Cheap bottles. Refrigerating the beer will drive the CO2 into solution.

    lol wow, i was just going off of what I read, but you actually been to Colonge... I'll take you word on it! haha. :mug: still need to fix my alcohol and my FG though. I am happy with 4.5 to 5, but I cant seem to balance it out with out messing up the SRM and FG.

    Mardi Gras is fine to visit, but its too touristy at that time. Everything is over done, streets are crowded, trash all over, kids peeing EVERYWHERE, police are a$$holes to everyone... for locals 'its a love hate relationship'. For SUPERBOWL, when the Saints won...WOW...that was a party!!!

    Ahh, yeah, I forgot that Cascade is American. "Americanizing" is good word for it then. So hop choice has a large role in what style of beer it is? "N'AWLINS" <--- spoken in tourist speak.... or how about, "Southern Gentlemen"........... if this is not a big hint of where I from...
