    hello from sw portland

Welcome JaggedIce! I am right next door in Gladstone! I have been away from brewing and this forum for a while but am getting back into it this weekend! Santa Wife got me a basic kegging setup for Christmas so I now have a gigantic excess of empty 12oz bottles. Let me know if you would...

Chill haze- Bottled clear, pours hazy

Quick to boil, quick to pitch temp, and a greater than 60 minute boil are things I have read about to help eliminate chill haze. I have done all three with my all grain batches and it seems to work most of the time! Of course there are other factors like grain type and quality but I am not...

Can I store and use unboiled wort for a starter?

I agree with duboman on this one! Of course you could really cut costs by slanting and culturing your own yeasts! With a minimum of expense and a little reading you could cut your yeast costs to practically nothing! Just saying! :D

    Stirplate

I usually do liquid yeast and starters but when I have used dry I get two packs (it's cheap enough) and just dump in right on top of the chilled wort. Never had issues but it is not a bad thing to hydrate your yeast!! I would only "proof" yeast that was very old or maybe subject to extreme temps.

Newbie in SF & Teaching Women to Brew!

Welcome to the forum (officially)! It saddens me that women would feel intimidated or made to feel intimidated. I would have thought that all of us male homebrewers would be able to drop our "egos" and just treat all homebrewers as equals. I have seen at many events where women get "pushed...

    Question about grain names

Yeah crystal is pretty much the same as long as the number is close +/- 5 or so. Yes the British crystal 75 will probably taste a little different then domestic Crystal 70 but then again, each maltster's crystal will be a little different anyway.

    First time all grain attempt

I am a big fan of malty beers and with the hop flavor profile I am thinking you are going to have a big hop flavor. I am thinking if you dropped 1 to 1.5 lbs of base malt and added the balance in Crystal 20 and/or 30, you could give just a little more malt character that may give some balance to...

    Need Some Clarification Regarding FG

I agree with frazier but I was also thinking of mash conversion! Did you check the mash for conversion? It is possible you did not get a full conversion from your grains (few drops of wort in a few drops of iodine and check for black) black means unconverted starches which will most like...

    Moving to 10 gallons!!

Couldn't agree more, along with all the other great feedback on this posting! You know dukes if things don't work exactly like they do with your 5 gallon batches the worst thing you will end up with is beer:cross: Mash it, boil it, ferment it, then come back and tell us how you did...

    Ninkasi Maiden the Shade clone?

Yeah Ninkasi and Deschutes, if I could brew beer like theirs I would never have to buy beer again! I am trying though:p

    Clean again?

    That's what I do!:mug:

    Hot Brew

If it is just secondary you should be OK. Temp is really critical during the early phases of fermentation, mostly! Once active fermentation is over the beer will usually reach the ambient temp of the room within a day or so. Obviously if you are lagering then temp control is very important...

    How do i start brewing

Wheats are pretty easy if like them. A simple pale or amber is always good to start with. The main thing is read a little here and of course howtobrew.com is an awesome free source as mentioned already. Don't get too nervous just follow the basic instructions, make the beer, post what...

i forgot to bottle my homebrew. 6 weeks into it. drink it? or dump it?

Add your hops, leave them in the primary for a week then bottle/keg. Adding hops using a sanitized mesh bag (sanitized marbles help weigh it down) can make it easy for glass carboys but you may need to add about 10% more hops since they are enclosed in the bag. Just toss the hops in if you are...

i forgot to bottle my homebrew. 6 weeks into it. drink it? or dump it?

I agree, this is how vulcanized rubber was made (by accident not by fermenting for 6 weeks) :cross: It may take a little longer to carb then if you conditioned for 3 weeks but it will carb fine as long as you add enough priming sugar or keg!!

Recipe I am trying to develop

looks like about 1.056 for a 5 gallon batch, the color is around 9.5 SRM. The crystal 60 seems a bit much for me. For a lighter color pale and more caramel flavor I would go with crystal 30 but that is my preference otherwise it looks like a nice easy drinking pale!

    Stainless pot

You should not have to do anything to it to start. I have only used a soft 3M style pad to clean my kettle's aluminum and stainless. Should not really need any sort of chemicals on the kettle anyway since the boil kills most anything that lives!

    My first infection ( pics)

Oxyclean free and some very hot(not boiling) water, 3-4 days soak and you should have a bucket as clean as the day it was made! Buckets are cheap but not as cheap as Oxyclean! Just my thoughts

    Alabama vote.

I just looked at the ALCAP website, wow!!! I feel so bad for all you non-ALCAP types there in Alabama. I am amazed that the type of mis-information and "brainwashing" that ALCAP projects can even exist in this modern age! From what I read it is as if everytime a person drinks they will...

How do you slow down a new brewer?

Does he like the beers he has brewed? If he does then more power to him! If he does not then maybe he needs to listen more to your wisdom and keep it simple! As much as I don't like to admit, there are some people that just don't get it! It is like cooking, there are people who cannot...
