    Year old yeast... an experiment

I had a packet of Wyeast 1272, American Ale II that had been in the fridge for a year, maybe 16 months. I had decided to brew up a pseudo-Magic Hat #9 clone, all grain, and use that yeast. I popped the smack-pack about 8 hours before I suspected I needed it, no starter. It was a gamble and I...

    I'm back...

Haven't brewed in a little over year, life changes, etc, blah blah blah. Decided least week that it was time. I'm doing two all grain batches today... first up is a Scottish 80 shilling and then a Magic Hat clone, except will be adding apple instead of apricot. Should be interesting. Had...

    Doughing in - alter efficiency?

What are your thoughts on how doughing in can alter efficiency - all the grain then adding all the strike vs altering strike water, grain, strike water, etc.

T-120 min, All-grain brew session about to start...

Been in a funk since the "Big-D" started back in the spring. Haven't brewed since April if I recall. However, throwing all that off the shoulders and have everything set up and ready to roll. Bring a basic Irish red ale. Wish me luck... time to get back into the game...

    Hop opinions...

I'd guess ingredients is the best place for this - move it as you feel necessary. I had a guy give me some fresh hops. He has two varieties, Cascade and Williamette. Only problem is his vine markers were destroyed and he didn't know which vine is which. I have already dried them. I have...

    Wheat and chill haze...

Let me start by saying I'll drink a good beer with chill haze any day, it doesn't bother me. I'm just curious... The short of it: Does any amount of wheat contribute enough to chill haze to make it noticible? Long of it: I brewed the Magic Hat #9 clone, all grain, out of one of the...

Efficiency - someone double check my numbers?

Math is not my strong suit but I can hold my own. None the less I'm a bit skeptical of how I'm figuring this. This is only my second time AG and if I am actually right I managed to pull off an 84.88% efficiency using this method: "How to Brew" Efficiency Calculation Here's my grain...

    WARNING: Beer making in progress...

My second attempt at AG - first one ended up in rave reviews. Not sure how that happened but I'll take what I can get. Attempt at Magic Hat #9 Clone Recipe roughly followed the North American Clone Brews book: Total grain bill: 9 lbs 10 oz Maris Otter - 8 lbs 12 oz Crystal 60L - 8...

Protien Rest? Should have asked sooner...

Brewing a semi-DIY recipe tomorrow... grain bill as follows: 8 lbs 12 oz Maris Otter 8 oz Crystal 60 6 oz white wheat Would I benefit from a protien rest? I'm thinking no since the small portion of wheat. Thanks for the help/pointers...

It's official... best beer I've ever made...

Credit to the members of this forum, their experiences, and general knowledge (well directed or not - LOL), I have so far made two of the best beer I've made ever. My brown ale was an all extract and my pale ale (was supposed to be an IPA), my first attempt at all grain, taste better than any...

    Jumping murphy - 1.002 FG?!

    1. If there is an infection in a beer that is fermented out, but has no off flavors, will bottling it and naturally carbonating it cause problems in the bottle? ********************************************************** The rest of the story... AG IPA kit - my first IPA and my first AG...

    Just bottled my first batch...

...and I can say, it sure sucks to be type A personality and envision the 1000 different ways you can pollute your brew as you bottle! Went well all in all. Only 1/2 significant disaster was that I had 10 bottles that my capper wouldn't grip and therefore wouldn't crimp. I ended up carefully...

Its crazy what has changed in the past 10 years...

Seriously... From when I first brewed, got out of the hobby, and now back in I'm amazed at the differences. I was still (still am now) a beginner and hadn't ventured out much but seems like the yeast varieties are much greater, auto syphions didn't exist that I'm aware of (LOVE that thing)...

    Hydrometer reading mystery?

I'm finishing up my sparge and took a hydrometer reading in both the brew kettle and in a hydrometer vial. The temp in the kettle is currently 118 and change and when you put it in the hydrometer vial drops right down to 109 and change. The mystery is when I take the reading right in the...

First AG is in the mash tun...

Currently fighting with the thermometer trying to get the temp right. I had it, it was high, so I added some ice and went to far the other way. I was up to 156 and probably should have left it. Now I'm sitting at 150.6 having already added 1.25 more quarts of water. Learning process! Just...

MLT question - drill the tubing?

I'll be finishing my 5 gallon Rubbermaid MLT project tomorrow. I have a false bottom and will be picking up some high-temp tubing. Something I'm not clear on - do I put 1/8" holes in the tubing also? Edited - the tubing that runs from the false bottom to the valve... should that be...

Opinions... rubber washers in contact w/hot wort...

I'm putting together a 5 gallon MLT out of a Rubbercooler and just couldn't get a good seal with the gaskets that came with it. So I ran up to the hardware store and picked up some rubber washers that will work great. However, now I'm considering how this might leach stuff (chemicals and off...

Fug-It and Shrug it Off Brown Ale - my first brew...

Short Story: While it's not technically my first brew, its my first in 10 years. It went well all in all. LME and some specialty grains. I learned my 38k BTU propane burner worked MUCH better than I anticipated for a 5 gallon batch. Making/using a chiller (and pre-chiller) was worth every...

Forced to choose - start high temp or low temp?

You're forced into a situation during the first part of fermenation. Would you rather face five under the low end of the yeasts preferable temp range or five over the high end?

    So, the wife's learning...

When I married her (20+ year ago) she was strickly a Bud drinking - nasty swill that it is. My first round of homebrewing about 10 years ago met with her mixed approval -most of which was "it's to strong." I'd roll my eyes and say, "well, guess I'll just have to drink it all myself then."...
