11-11-11 Old Ale failure to start! Need Alt. Yeast.

So I finally got around to making the 11-11-11 old ale, last weekend. I know, I know, it was way too late, but life kept getting in the way. I had a packet of the Wyeast 9097-PC dated 11/10/10, and I was suspicious about its viability, but I pitched it anyways. Well it's been a week, and...

Looking for a Sheaf Stout recipe

Anyone got a Sheaf Stout recipe? I fell in love with this beer during my travels to Australia, and recently was reminded of my love. I can't find it locally anymore, so I'd love to brew it. Anyone have a recipe, or something to start with? Thanks!

    Saison problem?

Not sure which yeast you used, but that's the key indicator here. Saison yeast strains define the style. Saison yeasts (WLP565, WLP566, WLP568, Wyeast 3724, etc) are designed to be fermented at generally high temperatures (75-80F), and require a few tricks to get it to attenuate fully. A...

    Kegging without a kegerator?

Right now, i'm just opening the door to pour with my picnic tap. It's still a huge step up from what I had. As soon as I can afford it, i'm cutting a hole in the top and putting a 2 tap tower with perlick faucets! As far as the wine fridge goes, make sure the wine fridge will be able to...

    Kegging without a kegerator?

For a year I kegged beers with no fridge or kegerator. What I would do is put the keg on ice in a tall trash can and drink it until the ice melted. No problem with this. Now I have a sweet little dorm fridge!

The Difference Between Porter and Stout?

A porters characteristic comes more from dark malts vs a stouts comes from rosted barley. Or at least that's what "The complete joy of homebrewing" says.

Fermenting in fridge/freezer - when ambient/room temp colder than desired?

I haven't delt with this issue before, but I know they make two stage controllers. One stage controls the heat, one stage for the fridge. Seems to me that a cheap heating pad plus freezer both hooked up to the controller would be the ultimate all-weather fermentation chamber! Also, I...

    methuselah

I would call some wineries, see if they have any empties they would sell. It might be a long shot, but couldn't hurt. If they have Methuselahs, they likely have the specialty shipping material for one. If they don't have one available, but have had them in the past, you could ask them where...
