    a little more help

    From what I've read here, I think the addition of Potasium Sorbate kills the yeast so it won't ferment after adding more juice/sugar.

    Decent Attenuation?

    OG 1.051 FG 1.010 = 80% Apparent Attenuation Real - 68% Honestly, this is the best spread I've ever had and it's still bubbling after 3 days. I usually get a FG of around 1.18 or so. Using a Cream Ale extract and added an extra Lb of DME. Not sure what it is going to taste like but...

    Read your instructions carefully before submerging the probe in water. I think mine said not to immerse it in liquid but I may be wrong. R/Avi

    I just tape the lead of the probe so it dangles about half way down the freezer - ensuring it does not touch the walls or floor of the freezer. I also have two of those stick on thermos (one on the bottom and one half way up) so it seems to keep everything very close to what I set it at.

    Bottle volume Question.

    Ooops...just bottled my first batch, a cream ale, with nothing but 22 oz bottles and I used all of the sugar in the kit. Tasted good but green at least :)

    Thanks guys. After this, I think I will start fermenting in a glass carboy and learn to walk down stairs correctly. Not being able to see it ferment just isn't fun.

    Northern Brewer's Cream ale "Something had to go wrong".

    I just did an American Cream Ale 4 days ago and it was clay red when I put the top on it. Since, the sample has lightened up considerably. I was worried as well but then again it's my very first batch so everyone says you are supposed to worry with your first one :)
