    Kolsch fermentation

Hi all- I've got a batch of Kolsch-style ale that's been chugging along for about 2 weeks with the temps held between 55 F initially, and now slowly up to about 60 degrees. I pitched Wyeast's 2565. Once the gravity is stable, are there any issues with transferring straight to the kegs, and...

    Water report help please.

I think it really depends on what style of beer your are planning. If you play around with Bru'n Water, you will pick up pretty quickly what changes may be needed to optimize your water for the style you are targeting. It can seem a little daunting initially, but it gets fun; and it will...

    Residual CO2 and Beer Gas

Hi all. I have been wondering about the impact on the residual volume of CO2 within the beer once finished fermenting, and pushing that using beer gas. If I look at estimates of the residual CO2 on a site that accounts for it when priming, it looks like it would come in around 1 volume or...

    Missed the Flakes

You think tossing it in the boil will give any of the intended texture, or did I waste a half a pound of flakes? More curious than concerned. Wish I could blame my error on drinkin- but I can't. I even looked at the bag of them while milling my grain bill. Oh well.

    Missed the Flakes

It's also one of my favorites to watch- this thing is a beast when it takes off.

    Missed the Flakes

Thanks for the reply. I hit my gravity and volumes just fine- the mouthfeel is my main concern. I'll keep you posted. I love this recipe. There is a tank of beer gas waiting to push it!

    Missed the Flakes

Nah- wort was rolling. That's when I tossed it in.

    Missed the Flakes

Hi all- doing Ed Wort's Robust Porter- again because it's awesome. This time, however, I failed to include the flaked barley in the mash. Doh. So I just threw it in a bag at the beginning of the 90 min boil. Thoughts? I know it'll still be a great beer. Thanks for any input.

American Porter Bee Cave Brewery Robust Porter

I did 10 gallons of this this weekend, and I've had all of the carboys out of my ferm "freezer" twice to clean up the geysers. I've had blow off tubes on both carboys, but I let a few whole cascade cones get in the second carboy. Churn-plug- BOOM. What a mess. Smells great though!

    So who's brewing this weekend?

Doing 10 gallons of Ed Wort's Robust Porter and splitting between a regular 5 gallon batch to get a vanilla bean/Maker's Mark hit before kegging, and the other five a little age in a 5 gallon bourbon barrel I got off a buddy in the liquor business. Plan to serve them on beer gas.
