I would give your supplies a try. As long as you don't switch the negative and positive is should work, or at least not hurt your pump.

The pump I used is 12v DC at 1.25A

I used an old laptop power supply. But there are several cheap ones on ebay as well.

Does it matter if the supply is "switching" or not?

Generally you don't want to just open up the valve on your mash tun anytime. Its the only place I use 3/8".
