Boosting with brown sugar in secondary; who does it?

My last 3 batches I have added about 1.3 (packed) cups of organic brown sugar to the secondary. I boiled the sugar in the water I used to top off my secondary after transferring from primary. I was real pleased with the flavor results of the first 2 (one AAPA, and a dry hopped munich dunkel...

    favorite GP yeast

what's everyones favorite yeast? I used to really like WL cali V, but it crapped out on me several times in a row and stopped fermenting and 1.020 ~ 1.015. So I switched to WL german/koelsch, and while it ferments down a little lower, it doesn't compact nicely a the bottom of the...

    squeaky sparge arm...

I have been trying to sparge with this Phil's sparge contraption that spins as the HL is passing through it. It works pretty well, and I have hit efficiencies in the low to mid 70's Something that's bothered me though is that is squeaks for like an hour when I am sparging. I've tried cleaning...

I had 7 lbs of pilsener 4 lbs munich 1/2 lb german dark crystal 1/4 lb german medium crystal 1/4 lb german melanoidin and came up exactly 5 gallons of wort with OG of 1.065 (temp corrected). seems pretty good to me, especially since the grains were milled like 3 or 4 weeks ago or so...

    2nd bad batch...

Crap, my prized munich dunkel brown sugar boosted dryhopped ale was bottled too early. grolsch bottles now open with tremendous force, flinging ceramic top across room. beer comes out as solid foam. it had bubbled away for 2 weeks in secondary, never really slowing down it's bubbling. FG...

    addicted to brewing?

It seems these days I just cannot go a weeend without brewing. I have 3 fermenters at a time going now. Hopefully I'll get over this before too long, but a weekend without brewing just doesn't seem to be a worthwhile weekend any more... :mug:

how long is too long in secondary?

I have one in secondary (AAPA) going on 2 weeks, and it's still bubbling every 10-20 seconds or so. I also have a bunch of dry hop hops sitting in there around the neck of the carboy. Do I need to get it out of there soon, or is it ok for another week? Thanks

First AG in the fermenter. holy cow...

Didn't really go the way I wanted. lots of drama/trauma. first off the recipe: (the world's easiest): 9.5 lb two row 1/2 lb Cara pils 1oz cascade hops 1 oz Liberty hops. recycled WL California V yeast from the (minimash + extract) AAPA I racked to secondary last night. ok...

    sparging arm ruined my brew???

i do not have an insulated hot liquor tank, so I just used my bottling bucket with 180 degree water (figured it'd cool off some by the time it reached the mash. well, my mash was onlt 130 degrees by the time I had run out of sparge water... now what??? I am boiling the sweet wort...

First All grain coming up, advice welcome.

SO I broke down and bought a 10 gal mash/lauter tun today, plus some grain. I have about 12 (mini-mash + 6or more lbs of ME) brews under my belt, and figured I'd make the leap. Soon (maybe tomorrow or next weekend) I will try to make ale out of the following 9.5 lb two row 1/2 lb Cara...

    thoughts on latest brews...

so my brewing has gone a little haywire lately... I made one Munich Dunkel, but as an ale, with California V yeast, and overdiluted in it primary. It had only 1.043 corrected OG. FG (after primary fermentation) was 1.015. :( So I put about 1.5 cups of brown sugar (in solution) into the...

using secondary = longer to bottle carb??

I bottled my first batch of beer that had spent time in a secondary. The beer is VERY clear, with almost no sediment in the bottle. However, while tremendously clear, the beer is also tremendously flat. does allowing the beer to settle in secondary delay the bottle-carbonation? most of...

so what happens when you don't sparge gently?

I am doing 5 gallon mini-mash + extract boils now, so I am steeping for 30 minutes at about 150-155 in the first 2.5 gallons of water, and then putting the grains (in thir bag yet) in a collander in the top of my brew kettle and sparging with the other 2.5 gallons that I had been warming to...
