    Mystery ingredient in Duvel?

I like Belgian beers, and most of my brews are Belgian clones. The one that is driving me crazy is Duvel, more specifically the head on a Duvel. Large rocky head that does not dissipate, and lacing that does not slide back into the beer, but instead, dries on the sides of the glass. I have been...

    Soft yeast

Several of my last batches had a soft yeast problem. First pour from a bomber is great, but second pour is yucky. One batch was a saison, another was a scotch ale, and an imperial stout. One batch I used gelatin for fining, the others got half a whilrlfloc tab. Bombers average a 1/4" of yeast...

    HELP! TOO MUCH ATTENUATION!

Ok. I did a long, slow step mash on a tripel I'm brewing. OG was 1.080. Pitched one smack pack of WY1214 on 1-6. Fermented at 68°, fermentation appeared to stop on 1-9. Put in my temp controlled freezer, and dropped temp to 48°. Went to check it early this morning (1-13), and there were bubbles...

Has anybody ever tried adding cinnamon, and did you use powdered cinnamon...

    Looking for these caps....

Bought some Arizona microbrewery beer today (Oak Creek Brewery, Sedona, Az), and I really like their caps. Did a quick online search for this cap, no joy. Sent the brewery an email, with no reply yet. Anybody know of a source for these?

    Hello from southern Arizona!

Hello to everyone here. I've been brewing for 6 or 7 months, but I'm new to this forum. I was planning on brewing up a quadrupel today, but it's 114° outside, so that's going on the back burner for now. Have an experimental tripel in the fermenter in a temp controlled freezer, and figured the...
