Are closed transfers worth the extra effort?

Also thought my keg was leaking so i installed a spunding valve and it was the taprite guage. If the yeast are still working i don't see the need to fully purge the keg. A few blasts work for me. Just keep the spund pressure low so the yeast still work. I bag the hops in the fermenter to prevent...

    Finally opening my Brewery!

NY is the brutal for business. The town boards have this thing for trees. My job put up an expansion building and had to line it with trees that are so tall now they block all the exterior lights. Are you by Binghamton. I'm on the CT border and two Brewery's there had zero problems opening.

    combining hops in hop sock?

I wouldn't use a hop sock. It will trap oils and aromas. It's like drying a blanket and it's still wet inside.

Not bagging any hops during boil or dry, and not cold crashing

This works great for free throwing hops in a keg but you'll want the bag when bottling. https://www.shop.clearbeerdraughtsystem.com/ I guess you could put a bag on the end of the hose or a auto-siphon when transfering to the bucket.

    Bottle Cap Question

Could be the caps but it's important to slow mix the beer every 3/4 bottles when filling up to get a even mixture or the sugar will just sink.

    Solitary brewer ?

I can't brew with anyone around. I have to concentrate on so many things it's easy to forget something. Sometimes i'm so focused i have no clue what they said.

    MM3 vs MM2Pro mill

I'll second the kegco and it's a great price. http://www.beveragefactory.com/homebrew/pre-fermentation-equipment/kegco-KM11GM-3R-grain-mill.html
