Advice on plan for my first decoction mash/Bavarian Hefeweizen

Any suggestions or observations would be appreciated since this is the first recipe I'm putting together myself. I REALLY want banana flavor to shine through, so I have used suggestions I've gleaned from the web. Especially...

Ideas of what to do with this combination of grains

Hi everyone So I haven't brewed in a few years and decided to do the bee cave brewery house ale. Downloaded beersmith and plugged my numbers in and took it to the local homebrew shop. The water in El Paso is horrible so I'm using distilled water and the instructions from the water primer (1...

Which water profile in Bru'n Water should I pick for Bavarian Helles

I'm going to brew a Bavarian Helles (all grain kit from Northern Brewer). My water out of the tap is horrible, so I'm going to use distilled or RO water and add salts. I'm going to use the Bru'n Water spreadsheet and was wondering what desired water profile I should use. Thanks for any help...

    mesh bag in mash tun.

Fairly new to all grain and have the round cooler with false bottom set up. I fly sparge. The three previous times I had very inconsistent flow out. This time I lined the tun with a large nylon mesh bag, secured it with a large rubber band. The lid went on fine and the cooler held its heat...

Arrowhead or City water? Found water profiles, any thoughts

I'm getting in to all grain and thinking about water. I checked out the arrowhead water profile and am concerened that the spring water is not very consistent (calcium for spring ranges from 5.3 -60 vs drinking water 5.5 - 11 and bicarb from 25 - 240 for spinrg and only 19-38 for drinking). I...

carbing Apfelwein after 1 year in the carboy

I've had 5 gal of apfelwein in a carboy for exactly one year and would like to bottle it and have it carbed. What's the procedure for this? Should I repitch some yeast or just do it regularly? Thanks

    Staggered additions worth the effort?

I was reading the thread about making a starter and didn't want to hijack it so I'll start a new thread. I've been making meads for the past year and since I'm very busy I haven’t been making starter or using the staggered nutrient additions. I've been rehydrating, adding the additional...

    Anyone use saw palmetto honey?

I picked up 6 lbs while on a business trip to Florida. Smells and tastes fantastic. Has anyone ever used this honey. I'll probably make a gallon show mead and some type of melomel. Has anyone had success with this honey type?

Tried to mix honey with blender, wife not happy . .. .

I pretty quickly (< 30 seconds) burned out our blender. I poured too much honey in the blender before adding the apple juice for my cyser. The blades just spun around in the honey portion and didn't mix it and the apple juice together. I guess the honey was so thick it just burned out...

    Just used a juicer . . . .

Recently used juicer for kiwi and cranberry meads I put together. Used 2 pounds of kiwi, got mostly juice and fine pulp that has settled to the bottom of the 1 gal jug after 5 days. 2 pounds of cranberry made about a cup of juice (powerful tart stuff). Can I hear the pros and cons of...

Would this work to get cleaner rackings?

I'm new, but this can't be an original idea . . . how about using a sanitized fine nylon mesh bag, or a smaller piece cut from one, use a sanitized rubber band to secure it to the bottom of the racking cane. Great in theory, but would it work in practice? Anyone tried it?

Should I repitch to ensure carbonation?

I've got a light cyser: OG 1.070, FG 0.998 at time of transfer. I placed it in secondary and it's been bulk aging for 6 months. I'd like to bottle half still and carb the other half. My question is this. It's been 6 months aging, should I repitch yeast to ensure carbonation? Thanks

To carb a cyser or not?

I've got 5 gal of cyser that I've been aging for the past 6 months. This is my first time bottling a long aged (for me anyway) brew and I've a question or two. Do you guys generally like carbed cyser or still? I know most like still mead and so do I, but I really like carbed cider, so I'm...
