    1 Year in the carboy...

Yeah, I know, bad idea, but anyway... My brown ale has been in the carboy (primary) since last March. Doesn't look infected from what i can see. Is it worth the time/effort of bottling it? or is there a way to find out if its decent? (taste it, i know, right?) thanks

How to tell if fermentation is TOO aggressive

This is brew number 3, so still very new to it all. It's been 72 hours now, on this Belgian Dubbel. First 2 days not much activity at all, and now its going crazy! so much so that i had to switch to a blow off tube. there is virtually no breaks in the gurgling at al, just constant "belches"...

had to switch to blow off tube mid-fermentation

after 2 1/2 days, fermentation kicked in— BIG time! So much so that i had to take the air lock off, and use a blow off tube—which I've never used before. Im using an empty Poland Spring Water jug. so, couple questions... first, did i risk infection? (tough to say I'm sure) and next...

24 hours and still waiting for fermentation

This is my third batch and it seems to be a pattern that fermentation doesn't start when it's "supposed" to. Using a liquid White Labs Belgian yeast. Brewing a Belgian Dubbel brew. Pitched it around 70 degrees in 5 gallon carboy. Temp in room is between 66-70 but difficult I say since...

    Water profile help

Hello, I've only brewed 2 batches, but both seem to have a slight off taste... Bitter, but not the "good" hoppy kind of bitter—almost "dirty" in a way, if that makes sense. I know it could be a number of things causing this, and I'm not going to post the recipes and details of each brew...

What to brew for my 3rd batch?

Hello I've only brewed 2 batches so far, and am looking for some advice on a 3rd. First was a kit, partial mash, extract, Belgian Pale Ale—came out pretty good Second was a recipe a local shop put together, brown ale that didn't come out too well.. So, looking for something fairly...

Under carbbed and slight bitter taste

This is my second brew. It was to be a Brekle's Brown Ale (English Brown Ale) 5 gallon carboy, one fermenting—yielded only about 36 bottles. Primed with correct amount, 1 cup water with sugar. been in bottles 2.5 weeks, and just took one from the fridge that's been in there 4 days now...

    8 days and still bubbling

Been 8 days today and the airlock is still bubbling, about every :10. Is this about right for fermentation? It's 5 gals in a carboy Thanks

Slightly off flavor on first brew

Just had a bottle of my first brew, a kit brew of a Belgian pale ale. Was in bottles for 3 weeks, had a few bottles chilled for several days. Good carbonation but just tastes a little off, just more bitter than it should, and not in a hippy kind of way. Any thoughts on what I may have done...

Airlock level changed but no signs of fermentation

Second batch so loads of questions/ concerns. It's been over 24 hours and the airlock water level has changed but the Brew looks clear, meaning no bubbles, krausen or any signs of anything happening. I know fermentation can still be happening so just curios what the change in airlock level...

    Topping off carboy

I have question about this, as well as the overall technique of brewing. Here's what happened. Mashed grain in 1 gal of water. At the same time, i was heating up between 3-4 gals of water in my 5 gallon brew kettle. after the mash, i poured it into the kettle, added the malts and...

Hop sludge when transferring wort—what to do?

This is only my second brew, so lots of dumb questions... When transferring my wort to the carboy, i'm pouring it through a funnel which has a fine mesh screen—which gets clogged almost immediately with what looks like green "hop sludge". What i've done (both times so far), is continuously...

Smack Pack didn't puncture but pitched anyway—Help!

So this is my second brew and a couple things potentially went wrong, the first being the pitching of the yeast. It was a Wyest smack pack. took it out of the fridge a few hours before brewing and smacked it—I thought it activated the pack inside, but didn't find out until a few hours...

    What temperature for wort?

Hi. Just picked up a kit and the instructions don't specify at what temperature the wort should be kept at for the hour boil. Stupid question, but should I just bring to a boil then let it slowly simmer for the hour? Do I need to monitor the temp? If so, what temp should i stay at? Thanks

    2nd Brew—what to brew??

I want to do my second brew and would love some suggestions... Nothing too complicated, obviously. First brew was a martial mash kit, not too complicated. Had all the instructions and everything I needed. (Belgian Pale Ale) from Brooklyn HomeBrew. Was looking for a Brekle's Brown clone...

First brew, a success! (I think)

So i just cracked open a test bottle of my first brew—A Belgian Pale Ale. Bottled it two weeks ago and chilled the bottle for just over 24 hrs. Good carbonation and head. Tastes nice, my wife said she's pay money for it :) question is this, (see the image attached) there's a good bit...

    Sediment floating

I've bottled my first bath, 2 weeks ago. Just put a tester in the refrigerator yesterday and noticed there was some floating sediment in it. Also had a closer look at the other bottles and noticed the same thing. Just wondering if this sort of thing is "normal", or if it means the beer...

    how long in the bottle?

My first batch has been in the bottles (hopefully carving up nicely) for 1 week today. It's a Belgian Mustache Pale Ale. How long should it stay in the bottles? What should I do next? Cheers

    Carboy cleaning (after first batch)

So i've bottled my first batch..and have scrubbed and cleaned the carboy with soap and the bottle brush. I'm sure it's not 100% clean or sanitized, so i'm wondering what needs to be done before I use it for my next fermentation. thanks
