    Gotcha, these are the types of responses i was looking for. Thanks for the info. Might just scrap this recipe or substitute the amber LME for golden/pilsner DME and steep the crystal.

    Advice on cooling wort.

    Got a rubbermaid container filled with cold water enough for the pot to be surrounded and put it outside for a bit, it's been 25 degrees here. Took about a half hour and one water change to cool. Works for me. In the summer I'll add ice to the water bath.

    That happened to a pale ale I just did. I let it warm up a bit about 64, wrapped it in flannel sheets and shook it up. It took off shortly after.I was using Nottingham yeast.
