    Brewing this up right now. Doing a 90 minute boil because I collected 6.5 gallons of wort. Didn't measure the pre-boil gravity. Had a stuck sparge. Hopefully that won't effect it too much. Upped the acid malt to 2.5 lbs. love that tartness it brings. It's a cheaters way to a sour beer. Lol...

    My first gose

    Being a wheat, it should have a little haze. If the haze is an issue, throw in some gelatin and cold crash it for two days before bottling. Can't wait to hear how the blackberries come out. Sent from my iPad using Home Brew

    It should be fine with the hop switch. I've had one done with sorachi ace and it was fantastic. The lemony hop went well with the tart characteristics of the Gose. Sent from my iPad using Home Brew

    IPA sweetness or lack thereof!

    I do a Red IPA that has a great hop punch along with a decent sweetness to help balance it. I simply use 1# honey malt in the mash for a 5 gal batch. It's a citrusy IPA using cascade, Citra, and simcoe, dry hopped with bramling cross. Had someone say it reminded them of Sunny D, the orange...

    I did a witbier with a similar grain bill. And experiment for me, since I had never tried that style, and never used acid malt.
