Favorite recips with Simcoe hops?

Taking a poll for my next batch.
I got 3oz of Simcoe sitting in the freezer waiting to be brewed!
What's everyone's favorite recipe to use Simcoe hops?
Commercial clones or your own creations all welcome.

One of my favorite simple recipes is a Simcoe/MO Smash that turned out really nice.

12# Maris Otter
1oz Simcoe @60
1oz simcoe @ 30
1oz Simcoe @1

Mash @ 152 for 60min
Ferment with US-05

Went pretty quick when I put it on tap if I recall correctly.
I also find that a Simcoe/Amarillo combo is really good.

I had a good CDA that used a good bit of simcoe. I actually had someone request 150 gallons for a private event, but I cant brew that much on my own. Insanely hopped up IPA, similar to Stones Ruination.

So here is the recipe.

approx. 1/2 lb chocolate
approx. 3/4 lb honey
approx. 1 1/4 lb 60L

still with the 9 lbs Extra Light DME.

2oz Chinook @ 60 min
1oz. Simcoe @ 60 min
.5oz Citra @ 60 min
.5oz Citra @ 2 min
1oz Simcoe @ 1 min
.5oz Amarillo @ 1 min
1oz Simcoe Dry hop 7 Days
.5 Amarillo Dry hop 7 days

After having brewed this twice, I ended up leaving out the Citra@ 60 and using it @ 15. And I bumped the Amarillo up to 1oz shots at each addition.

I found a good Stone Sublimely Self-Righteous clone online once. It takes more than just Simcoe, but turned out well. That reminds me, I've been meaning to rebrew this one:

11 lbs LME
10 oz. Crystal 60L
10 oz. Carafa III
1.5 oz. Chinook (13%) @ 60 min.
1.5 oz. Chinook (13%) @ 25 min.
1 oz. Amarillo (7%) @ 10 min.
1 oz. Simcoe (13%) @ 10 min.
2 tsp. yeast nutrient @ 15 min.

White Labs CA ale yeast

1 oz. Amarillo (7%) 7-day dry-hop
1 oz. Simcoe (13%) 7-day dry-hop

Simcoe Pale
10-A American Pale Ale

Size: 6.0 gal
Efficiency: 70%
Attenuation: 75.0%
Original Gravity: 1.055 (1.045 - 1.060)
Terminal Gravity: 1.014 (1.010 - 1.015)
Color: 6.15 (5.0 - 14.0)
Alcohol: 5.41% (4.5% - 6.0%)
Bitterness: 44.5 (30.0 - 45.0)

Ingredients:
9.5 lb (72.2%) Pilsen Malt - added during mash
3.0 lb (22.8%) Maris Otter Pale Ale Malt - added during mash
300.0 g (5.0%) Caramel Malt 20L - added during mash
9.0 g (6.8%) Simcoe® (12.2%) - added during boil, boiled 90 m
22 g (16.5%) Simcoe® (12.2%) - added during boil, boiled 15 m
34 g (25.6%) Simcoe® (12.2%) - added during boil, boiled 10 m
34 g (25.6%) Simcoe® (12.2%) - added during boil, boiled 0 m
34 g (25.6%) Simcoe® (12.2%) - added dry to secondary fermenter

The 0 minute addition is added into the whirlpool and left to steep for 20 minutes prior to chilling. I will ferment this with S-05 at about 64.
 
Yoopers Dogfish head clone is a good one. I do a variation of that with extract that substitutes the Amarillo with cascade.
