    Classic question that comes up for the newbs. Since you are only 5 days in I wpuld wait about 5 more days and take a gravity reading. Since you had a lower OG I would adjust your expected FG a smidge. Rest assured at the end of the day you still made beer :0) good luck and welcome to the obsession.

    Theheadsn..I have the same size freezer and didn't do anything special besides use a 12 amp appliance plug for wall. My unit is external from freezer with a Celsius stc and house wall plug. Good luck! Best thing I ever did to help my brews :)

    Too late to dry hop?

    I think the challenge you are going to run into is only allowing the hops to sit for 3-4 days..I normally shoot for a week of dry hopping on my beers. 1oz of hops will be enough to add a little nose to the beer but on my IPAs I shoot for 2 oz. Good luck and I'm sure it will be tasty either way.

    I really liked the 2oz of fresh zest..it's been in the bottles for about a month or so and has balanced nicely. Good orange flavor on front side complimented by the cascades but still has that pale malt flavor I love. All and all a great beer :0)

    I used fresh zest of a naval orange and added 2 oz with 10min left in the boil. Its been in the bottle 1 week so I am patiently waiting. All gravity samples tasted awesome with a medium orange kick. Cheers!

    I like to put a small hand towel under the carboy just so its not sitting directly on the bottom of freezer to help ping pong effect. I love my chest freezer, ceramic heater and stc-1000. Best $75 I have spent in brewing and was a fun build. Brew on!!
