My last cider - Safale S-04 strain

Hi all Here's the last (hard) cider I've fermented using Safale S-04 yeast and pressed apple juice from my orchard (all desert apples). My 5th batch ever and the first one using this yeast strain. Nottingham was my preferred yeast, until now. 1.050 SG - 1.006 FG - 5.78% potential ABV%. No...

Just finnished my WLP775 hard cider. Impresions.

My cider has dropped to 1.002 two days ago and I've racked it to another carboy, forgetting to take some of the lees off the bottom. Well, man learns everytime. I've used the so well reviewed WLP775 cider yeast from White Labs and it is still sweet. I thought that by this low SG will be...

    Star San and something else?

I'm about to clean my carboys. Could I use a normal dish detergent and then just apply some Star San as I always do? I don't see any reason to buy a brewing specific detergent. What do you think?

    Insane krausen with expired yeast

I've just made 6 gallon (hard) cider using nonpasteurized apple juice. As I had a bag of Safale S-04 yeast that was long expired for about 2 years, I've thought of building a starter with some DME using my new bought stir plate. After 8 hours it's bubbling like crazy and I've never seen such a...

Yeast starter step-up for a 2L Erlenmeyer flask

I'd like to start creating my own yeast database and make yeast cultures on plates and slants, so I could save some $ and for the fun of it. I'd like to make a yeast starter enough for 15 gallons cider starting from a pack/vial of White Labs W775 yeast. On the pack it says that for that...

Can I add English tea in my secondary? Will I spoil it?

I've started the biggest cider batch (15 gallons) ever, but I was reluctant to add anything else to it. Is it too late to add some English tea to supplement the lack of tannins and give my cider a bit of body? Could you recommend me what tea to add?

Dextrose and Maltodextrine added together ?

Has anyone ever used dextrose for priming together with maltodextrin, which is used for giving cider body and mouth-feel? Should I stick to the priming calculators' directions and add the required dextrose quantity and the same amount of maltodextrine? Or a dext:maltodex = 1:2 ratio? I'm...

Cold crashing, bottle conditioning and pasteurizing - Will it work ?

Hi all I'm 2 days shy of starting my first cider batch. After reading a great amount on this forum I'm planning on cold crashing, racking it at 1.015-1.010, bottle conditioning to carb it a little and finally pasteurizing using the stove method. Has anyone tried this approach? Will I...
