I write to see if someone has had trouble, conditioning in the bottle after a cold week with the yeast wlp500.
The cold week is at 39 degrees then add sugar and wait at 20 degrees until the co2 is ok.
Anyone has noticed any changes in the behavior of the wlp001 since april? , i think the yeast let more flavors and the fermentation is more aggressive, the krausen is highest

Is normal in this yeast, in my last batch the airlock stop it activity at the 12 day.
In the 3 start days the yeast has produce the most activity, the others days the airloks works like you say ,until 4 secons.
I think, rising the temperature you are doing a diacetil rest, in my opinion you must let over two weeks in primary . the yeast will clean the beer ,problably
I did ferment at that twmperature and the beer has diacetil and metalic taste i think you should increase the twmperature to 67 +- it should be work better
citra is a very aromatic and flavored hop it makes the beer with a citrus and tropical fruits flavor and aroma if you like that ,go on.
But if you aren't sure take the cascade for the last minute and the citra for dry-hoping ( for dry hoping the amount of hop is the 1 to 1,5 pour litre perhaps...

For my is better to change the 1 oz bitterness hop to centenial and use the 1oz of cascade for the last minute i like the cascade aroma and flavor

i has like you the bitternes and orange taste after the fermentation but after two weeks in bottle it looks well the bitternes and taste are ok
i put 10 gr of the bitter orange to 14 litres of witbier
i take a litle, now the rest is at the bottles

i,m making a wheat beer and i do it whith dry munich yeast.
after the fermentation i take a probe and it is well but have a litle sidred flavor like the belgian beers(orval, duvel)
Is that normal? is my firts time whith this yeast

i did that , but the beer has a acid taste.
I answer my self if i put the black malt later the acid taste is over and the chocolate and coffe flavors are ok.
