    I write to see if someone has had trouble, conditioning in the bottle after a cold week with the yeast wlp500. The cold week is at 39 degrees then add sugar and wait at 20 degrees until the co2 is ok.

    Is normal in this yeast, in my last batch the airlock stop it activity at the 12 day. In the 3 start days the yeast has produce the most activity, the others days the airloks works like you say ,until 4 secons.

    I did ferment at that twmperature and the beer has diacetil and metalic taste i think you should increase the twmperature to 67 +- it should be work better

    citra is a very aromatic and flavored hop it makes the beer with a citrus and tropical fruits flavor and aroma if you like that ,go on. But if you aren't sure take the cascade for the last minute and the citra for dry-hoping ( for dry hoping the amount of hop is the 1 to 1,5 pour litre perhaps...

    i did that , but the beer has a acid taste. I answer my self if i put the black malt later the acid taste is over and the chocolate and coffe flavors are ok.
