    After fermentation, flavor changes from temperature can be from accelerating spoilage. If you're going to leave your batch at < 70 for a month or so, then move it to a keg I wouldn't worry too much about it. If you want to keep this around for a couple years, you'll be in trouble.

    I get what they're trying to do and I get that it's a play off the old "free as in speech" vs "free as in beer" distinction, but "open source beer" has always kind of irked me because recipes are not copyrightable.

    I've gotten that flavor when I used canned LME, but I can't imagine a brewery is buying LME in 3.3 pound cans.

    I didn't like it aged, it seemed like the hop aromas and flavors were subdued when I tasted a 9 month old bottle.

    I used to get a flavor that I could best describe as "metallic" when I used canned LME. When I switched to fresh bulk LME my beers improved immensely.

    I was looking at beers in the fridge and spotted a "mystery beer": no label, nothing remarkable on the cap. It looked like a homebrew but I knew it wasn't because it wasn't one of my caps. So I opened it and poured it, and it turned out to be my last Cup A Joe stout. Delicious!
