    A Christmas-themed, piney Black IPA

So my inspiration for this beer really stems from the feeling of sitting by the fire on a cold December night, snowed in, drinking a beer that's dark and hoppy. I had originally planned for this to have some chocolate malt with cinnamon in the boil and dry hopped with pine chips, but I...

    American Pale Ale

Wanted to follow up on this thread with some reactions to the finished beer. When I took my recipe to my LHBS they suggested I spread out my hop schedule a bit to balance out the bitterness. The beer ended up being a lot less hoppier than I had originally thought. But it still turned out...

    A Hoppy Aamerican Saison

Thanks for your feedback guys. After doing some more research, I went back to the drawing board. My original inspiration for this recipe was to make a Belgian style farmhouse saison, but hop it pretty intensely with American hops. This will also be my first foray into dry-hopping. I guess that's...

    Insane bubbles in secondary

Thanks for the advice guys! I think he's going to bottle this weekend and see how it turns out.

    Insane bubbles in secondary

My buddy had some problems racking to the secondary, and after a week it looks like this. Apparently the siphon clogged and he ended up using a funnel and a screen. Obviously it's infected. Is there any way to save it?

    American Pale Ale

I'm a big fan of that schedule too, but I'm worried it'll put my bitterness way too high. Right now I have: 1 oz comet 60 minutes 1 oz simcoe 15 minutes 1 oz citra 5 minutes IBUs: 65.2

    American Pale Ale

Thanks all! Rejiggered recipe below. Any recommendations on yeast? I did some research and ended up switching to US-05. Seemed to have the best reviews. Next up, a German Wit! Recipe Specifications -------------------------- Boil Size: 5.00 gal Post Boil Volume: 4.25 gal Batch Size (fermenter)...

    American Pale Ale

Point taken. The citrus and coriander are out. I want a pure Pale Ale. And I'll do some more research into the hops. Yooper, you bring up an interesting point I've been meaning to address. I've been making my recipes in BeerSmith and was never sure if the volumes were matching up to what I was...

    American Pale Ale

Thanks dawg :mug: I knocked the 40L down to 1.5lbs and the 2 row up to 9lbs. The citrus and coriander I'm throwing in to play off of the hops. I went with Cascade and Simcoe because of their citrus characteristics. Thought it would add an interesting flavor, but let me know if I'm wrong!

    American Pale Ale

Afternoon HBT! Looking to create an American Pale Ale this weekend and wanted some advice. Here's what I'm starting with. My grain bill should be fairly straight forward (just a bunch of 2 row and some color) I'm mainly worried about the hops and additions. What do you guys think? Cheers...

    Help with my first ESB

Went to my LHBS on Saturday to gather my ingredients for brew day, and they helped tweak my recipe. I went to Marris Otter instead of the 2-Row at the LHBS' suggestion, we also switched out my bittering hop to Admiral, and used a half pound of 120L crystal instead of all my specialty grains...

    Help with my first ESB

Did some more ESB research. Tentative brew day set for Saturday (pending a trip to the LHBS). Updated recipe: Volume: 5 Gal - Extract/partial grain Estimated OG: 1.060 Estimated FG: 1.015 IBUs: 42.2 Color: 20.5 SRM Estimated ABV: 5.9% British Ale Yeast (Wyeast Labs #1098) 5 lbs...

    Starsan in secondary

Awesome, I had read not to fear the bubbles. But reading it was one thing, seeing it sitting on top of my beer was another! Just checked on it this morning and it looks fine, bubbles are gone. Is this true?
  19. KneeHighBrewery

    Starsan in secondary

So I just racked a saison to secondary (I know) and there's still a lot of starsan bubbles left over. Do I need to worry?

    Help with my first ESB

Thanks for the tip. Added 1/2 lb of flaked corn to the recipe (also added 3 oz of Chocolate Rye Malt to the grain bill for some more color.) And we're still within the green. Nice.
