    Plum Beer?

    I have a bunch of plums from our tree, so I was thinking about doing the same. One of our local breweries puts out a sour plum abbey ale every year. I don't think I'd do a sour though. I was also thinking a barleywine might not be a bad choice either.

    Got'cha! Yeah, that's true. I'm not too worried about having a carboy tied up for a while, but it just makes sense to bottle it after a short while then, as you said, open one up every so often to see how it progresses. Once I get an actual oak barrel, it'll be a different story! :) Thanks!!

    I'm not too sure about the spices, but I would imagine they would be similar to hop additions? Haven't tried those yet... But, for fruit/flavor, I've heard both that you can add to boil or fermenter. I made a Belgian and added orange zest to secondary in a hop bag and let it sit for two...

    Yeah, forgot to mention you only need to boil the zest/fruit if you're adding to secondary. If you add as a late boil, you should be ok, but might want to anyway.

    I opened a bottle last night, and am happy to report that it turned out fantastic!!! I think I might add some Citra for a dry hop next time though. The orange flavor turned out just right... not too strong, not too weak, but I wouldn't mind a little more hop kick to it! :) :mug:
