    I can confirm that sparging with your wort actually lowers the gravity of the wort. I lost .006 when I tried it. Not much, but significant.

    Super attenuated cream ale

    Update. the cream ale turned out very clear and light. I'm not crazy about the slight taste of corn (at least that's what I think it is). I think I'll halve the corn next time. Or maybe I'll try rice, as you did in your recipe. Cheers!

    I don't have a lot of experience, but I suspect ACbrewer's advice is good. Another yeast pack would be ideal. If you don't have one, I suspect the beer will turn out fine. Maybe a bit under attenuated, but tasty anyway.

    Agree. A round cooler with a false bottom seems to work well for fly sparging. A big rectangular one works well for batch sparging.

    Correct on the mash temp... It was 148. The fermentation temp was probably 68-70. I tasted it and it seemed OK for this stage. I was wondering if the high attenuation would rob the beer of body, but I guess it will be light for spring!

    I just bottled 5 gallons of cream ale after 10 days in primary. The OG was 1.048 (good to go for cream ale). But, the final gravity is 1.002. If I calculated things correctly, the yeast attenuation was about 96%, and the ABV is about 6%-- high for this style. My question is, why so much...

    Any chance your fermenter is not air tight? Air leakage from the lid of the bucket, for example, can make it seem like nothing is happening.

    Would you recommend leaving it in primary for a month? I was thinking primary for 2weeks, and secondary for another month or so...

    Imperial Russian stout is in primary - 11 days so far. OG was 1090. Gravity is now 1024 (8.8 ABV). I'm thinking about adding some champagne yeast in secondary to reduce sweetness and raise the ABV. Any thoughts?
