    Knob Creek. My dry stout tastes metallic, and my EIPA is astringent. My brew year's resolutions are to maximize shelf life and to get a hold of my brewing water.

    My 11.7 Single Syrup, Single Malt, Single Hop (SSSMaSH) Quad. 11.7% ABV. Not bad flavor, but the oaked version is much better. *Very* light body, fermented down to 1.006, iirc. In a related story, no head retention to speak of. Cola-like effervescence. MUCH too easy to drink for an 11.7% beer...

    Cash and permission (sweetest gift a SWMBO can give) to splurge on a LaMotte brewing water test kit, 0.1g digital scale, pH meter, and additives so I can start working on my water.

    On deck for this weekend is a Pre-Prohibition Pilsner 4:1::6-row:grits, doing a cereal mash for fun, all Cluster hops, 34/70 yeast, and hopefully my water test kit and additives will be in so I can work on that a little, too.
